CURRY LEAVES

Murraya koenigii

Hindi: Kitha Neem
Sri Lanka: Karapincha

Resembles a small narrow bay leaf, but much more aromatic with a distinct taste that enhances curry dishes, particularly South Indian/Sri Lankan dishes and coconut sauces. The leaf is fragile, with a short shelf life, but can be stored in the freezer.

Availability: Because of their fragility and short shelf life, most curry leaves marketed in Australia move directly from producer to retail - and they are retailed mostly in specialised Indian or Sri Lankan spice shops. Because they grow in temperate conditions many users cultivate their own supply at home.

Growing conditions: Temperate — Queensland and New South Wales.
