Vegetables AMARANTH - CHINESE SPINACH Amaranthus tricolour Chinese: Een Choy, In Tsoi | Japanese: Santonsai | Malay: Bayam The leaves of Chinese Spinach are mostly green with red colouration in the centre. This produces a reddish juice as they are cooked. Amaranth/Een Choy is marketed in the wholesale markets in bunches of several retail size bunches.
